We are delighted to be partnering with Stefano Marvello in 2021 to be able to offer two very special cooking opportunities.
AUTUMN On Sunday 9 May 2021 we are offering mushroom foraging followed by a 3 hour cooking class at Stefano’s Burradoo Kitchen to learn how to use pine mushrooms in Italian cooking. This is a three hour cooking class and only 10 people can attend so places will fill quickly. You start the day in Penrose State Forest at 10am with our Local forager Jo from Quarter Acre Farm. Then after having learnt to identify, find and harvest fresh wild edible mushrooms you drive to Burradoo by noon to begin the class. Expect to wrap at 3.30pm at the latest. Cost is $195 per person and this is a self drive tour.
WINTER On Sunday 11 and 18 July we pick up the pans and cook in the field. This tour includes foraging for truffles and them enjoying a group workshop cooking class at the Trufferie in the old homestead ruins. In true paddock to plate you will unearth black perigord truffles and learn how to cook these tubular delights as the Italians do in a 2 and half hour class. These two classes are self-drive, meeting at a Truffle Farm in Greenwich Park near Marulan, NSW. Arriving for 10am for a 10.30am sharp start to the hunt and finishing around 2pm. Cost is $210 per person with only 10 places available.
Please bring own water bottle, warm jacket, camera and wear flat sensible walking shoes or gum boots. A detailed map fo the location will be sent 2 days prior to each event.
We can also offer private group bookings from 2 to 10 people or more, based on availability.

Learn Italian cooking and share Stefano’s passion for gastronomic indulgence at his new Studio Cucina in Burradoo. His classes focus on the tradition of the long lunch, where everyone plays an integral part in preparing the meal. With a fresh approach to cooking classes, each experience is 100% hands-on providing guests the opportunity to develop and learn lifelong skills in Italian cooking. Classes range from pasta and sauce making to a full Italian masterclass, with the added option to head out to local producers at the farm to collect ingredients before heading into the kitchen.

A wonderful experience – we will be back!
My partner and I took part in the Long Italian Lunch cooking class with Stefano & Yianni. We had such a wonderful time, learnt some amazing recipes and ate some delicious food. Stefano & Yianni were wonderful hosts, they welcomed us with open arms and ensured we truely enjoyed our experience. I would highly recommend the Italian Cooking Experience to anyone and of any age! We can not wait for our next class!

Experiential learning at its best! My wife and I enjoyed an informative and fun day of learning about Italian cooking in this hands-on experience, as well as getting to eat the beautiful 3 course meal that we had created paired with magnificent local wines.
Our host and Chef, Stefano, has the passion and the patience to impart his knowledge and skill to novices like us. He has a superb set up with an intimate, fully equipped teaching kitchen and the friendly dedication to make it all work. Since written recipes and instructions were supplied, we did not have to take notes and thus could fully immerse ourselves in this brilliant cooking experience.
Thanks Stefano and Yianni for a magic day. We have already booked in for a Pasta Master Class and would highly recommend others to do the same.
A Sunday of Cooking and Grazing
This was a wonderful experience with a gracious and knowledgeable host. Stefano coordinated an enjoyable and informative day, 10.30-3.30, full of hands-on cooking and eating! The menu was varied yet traditional Italian fare. Highly recommended to all. We’re taking the whole family next time!
