Forage Wild Food

In Autumn enjoy a Wild Food Adventure as we forage pine mushrooms in the forests of the Southern Highlands with local forager Joanne Dodd. Learn how to identify, find, cook and devour delicious edible fungi as well as enjoy tasting some local cool climate wines.

We also have one special mushroom forage on Sun 9 May which includes a cooking class with Stefano Marvello. And in Spring we offer edible weed foraging workshops.

Truffle Hunts

The frosts of winter signal the start of truffle season with two incredible unearthed experiences on offer. Both start with a truffle hunt amongst the Iles and Robur Oak trees as we work with the truffle dogs to follow the mystical aroma of Black Perigord Truffles. You can then sit back to dine on a 3-course lunch or for a more hands-on experience enjoy a truffle cooking class in the Trufferie with local Italian Chef, Stefano Marvello.

Forest Bathing

It’s time to rethink your relationship with nature.

In Germany, where it originated, it is known as “Waldtherapie”, in Japan it is called “Shinrin-yoku” (森林浴) or “Shinrin-ryōhō (森林療法)”, in Korea it is referred to as “Sanlimyok (산림욕)” and in China and Taiwan people call it “Sēnlín liáofǎ (森林療法)”. Here in Australia the practice is known as forest bathing, shinrin yoku, or nature therapy.

This will transform you and fuel the soul.

The Highland Valley Forage is an introduction to the menu of the Highlands, Shoalhaven and Coast South of Sydney. From foraged indigenous herbs & spices, wild mushrooms, truffles, lovingly farmed produce to sustainably reared animals and small batch artisan products, our region offers a diverse range of produce. Wander the Wingecarribee takes a heritage approach and tells the story of Berrima through a historical menu and the tales that shaped this Georgian Village.

Dining in the Vines

During the Autumn Equinox it’s grape picking time in NSW so we celebrate with vineyard experiences. Starting with our annual Wine Harvest Feast at St Maur Winery in Exeter on Saturday 20 March. This is a unique opportunity to experience this stunning property as the autumn colours start to flood the highlands and we go beyond the cellar door to dine in amongst the grape vines.

This year we are also collaborating with Lake George Winery to bring you a Grape Stomping Festival on Sat 27 March which includes a live performance from Furnace & the Fundamentals as well as an Earth Hour vigil. Let’s kick off our shoes and get crushing!
